Fast & Easy Roasted Veggies
I absolutely LOVE roasting veggies like this. You can grill them too, but I live in PA, where the weather is wacky half the year and freezing for much of the rest of the year, so grilling isn't always fun. This way, I can munch year-round!
TOTAL TIME: 10 minutes prep, 20-30 minutes roasting
SERVING SIZE: depends on the amount of veggies
Easy-to-Make, Easy-to Adapt Chili
So I'm terrible at planning ahead and following recipes to the 1/4 tsp. I just don't often make time for it. Thus, I end up with a lot of meals that are easy to adapt to whatever stuff happens to be in my pantry.
This chili is incredibly fast AND easy AND adaptable AND was kid-approved - and my kids are not always non-green bean fans. They also don't like a lot of spice, so I just add as much as they'll handle, but feel free to add as much as you like! It's a fairly thick chili, so you could use it for nachos, taco salad, tortillas, etc.
TOTAL TIME: 30 minutes
1. Cook ground meat until no longer pink in the middle. Drain off as much fat as possible, and crumble meat.
2. Stir in remaining ingredients (tomatoes, beans, pumpkin, seasonings).
3. Serve over rice or pasta or with cornbread, if desired. If you want to make as a nacho dish, serve over tortilla chips with your favorite toppings (lite or fat free sour cream, hot peppers, lettuce, salsa, etc.), if desired. Could be used as a tortilla filler or on a salad with corn, rice, salsa, sour cream, etc. Enjoy!
